3 Ways To Eat Our Mexican Chicken

Chicken is perhaps one of the most versatile meats readily available and it plays an incredibly important role in Mexican cuisine as a whole. From Fajitas to Tacos to Enchiladas and more, chicken can be used in all of these dishes. More importantly, our Mexican Chicken dish is versatile enough for you to use over and over in a number of recipes and never get bored. To give you a helping hand, we have put our favourite three ways to eat our popular Mexican Chicken dish.

Get Creative With Fajitas

The history of the popular fajita goes back to the rancheros in Mexico who would be given the bits and bobs of the reared meat, grill it and then serve it in a flor tortilla with vegetables. However, it did not really rise to prominence until the 1970’s when a popular restaurant, Ninfa’s, in Texas started to serve fajitas with beef and chicken after requests from customers. Soon, other eateries jumped onto another Tex-Mex trend and the phenomenon of the fajita was born.

It is easy to see why so many enjoy the dish as it is versatile for meat-eaters and vegetarians alike and also pretty healthy with a large dose of vegetables, salad and guacamole always included. In fact, it is exactly why it is one of our favourite ways to use our Mexican Chicken. Follow the recipe below to get the perfect fajitas at home with Dining.

Ingredients:

  • 2 Portions of Mexican Chicken (from Dining)
  • 6 Flour tortillas
  • 1 Onion (as needed)
  • 2 Peppers (as needed)

To serve:

  • Guacamole
  • Sour Cream
  • Mixed Leaf Salad
  • Salsa

Instructions:

  1. Slice onions and peppers into thin strips to be added into the fajita
  2. Heat up Mexican Chicken as instructed on the packaging
  3. On a plate, place one flour tortilla and spread salsa across it
  4. Add Mexican Chicken to the centre of the tortilla
  5. Place onions and peppers on top of the chicken
  6. Add guacamole and sour cream to taste
  7. To finish, add mixed leaf salad and fold over for the perfect fajita
  8. Repeat and enjoy!

Get Crunchy With Tacos

Another incredible staple Mexican dish that has evolved and is loved by many, the taco, and the culture that comes with it is incredibly important too. Although there is no definitive origin of the taco or its name, it is thought that the Mexican miners used this term as it also refers to a small charge they would use to excavate the ore.

Soon the likes of Glen Bell created a system for tacos to be mass-produced and sold all over America, creating a huge success with the Taco Bell chain of fast-food eateries and that is where we will take a little bit of inspiration for our taco recipe!

Ingredients:

  • 2 Portions of Mexican Chicken (from Dining)
  • Taco Shells
  • Lettuce

To serve:

  • Guacamole
  • Salsa
  • Pico De Gallo
  • Corriander

Instructions:

  1. Line the taco shells with the Mexican Chicken
  2. Layer lettuce, salsa, guacamole and pico de gallo to taste
  3. Garnish with coriander
  4. Enjoy!

Get Cheesy With Enchiladas

 Ah, the enchilada is one of those hearty family dishes that can be shared, loved and enjoyed with others, just like the Mexicans do!

Unlike fajitas and tacos where the origin can be traced relatively easily, the origin of the enchilada is not known at all with the practice of wrapping meat in a corn tortilla has been around well before the Spanish invaded Latin America and probably as early as the 1500s. The key difference that sets our enchilada apart of its sister dishes is the use of the corn tortilla and the double-wrapping of the meat as opposed to the single wrap we see on a fajita.

Ingredients:

  • 2 portions of Mexican Chicken (from Dining)
  • 1 Onion (as needed)
  • 2 Peppers (as needed)
  • Corn tortillas
  • 415g Can of refried beans
  • 700ml bottle passata
  • 200g cheddar, grated

To Serve:

  • Coriander
  • Sour Cream
  • Guacamole

Instructions:

  1. Heat 2 tbsp of the oil in your largest pan, then fry the onions, peppers for 10 mins until soft. Add our Mexican Chicken and let simmer.
  2. Stir the beans and 150ml of the passata into the veg and chicken.
  3. To assemble, lay the tortillas onto a board and divide the chicken mixture between them, folding over the ends and rolling up to seal.
  4. Arrange the folded enchiladas neatly and snuggly in an ovenproof dish and then spoon the remaining enchilada sauce over the top and scatter with grated cheese.
  5. Bake for about 20 minutes, or until the filling is piping hot and the cheese bubbling, melted and golden-brown.
  6. Share and enjoy!
